If you’ve ever wondered how you can get more delicious cold brew into your life--you are not alone!  This thought has been keeping us up at night too.  Over the past few months, we’ve been experimenting with our cold brew--we’ve cooked with it, baked with it, and we've even BBQ’d with it--and have absolutely loved the results.

We’re excited to announce the launch of a new series called Table

Over the next several weeks we will be rolling out some of our best recipes from the Golf Park test kitchen.  You’re going to love how versatile cold brew can be in the kitchen.  Our hope is that this series inspires you to try these recipes, as well as create your own.  We would love to see the different ways you’re using cold brew in your own kitchen.

For our first #gpctable installment we’ll share one of our favorites: 

GPC WHOOPIE PIES

We all love the classic spoonful of icing smashed between two cookies.  We couldn’t think of a better way to start than taking a classic treat and infusing it with Golf Park flavor.

With the perfect combination of coffee & chocolate, this dessert will be a definite crowd-pleaser.

We made the cake-like cookie jumbo sized to make this an extra decadent treat.  Feel free to make minis if that suits you better.

PIES

INGREDIENTS:

1 ½ cups flour
1 cup cocoa powder
1 t baking soda
¼ t baking powder
1 t salt
1 stick butter (room temperature)
1 cup brown sugar
1 egg
1 t vanilla
½ cup GP cold brew coffee
½ cup milk

Yield: 6 Large or 12 Small Pies

DIRECTIONS:

  1. Preheat oven to 350 degrees F.

  2. In a large bowl, beat butter, sugar and egg together until well combined.  Add vanilla and beat again.

  3. In a separate bowl, combine flour, cocoa, baking soda, baking powder, salt.

  4. Add half the dry ingredients to the egg mixture and beat or stir.

  5. Add the cold brew and milk, beat or stir.

  6. Add the remaining dry ingredients, beat or stir.

  7. Spoon batter onto a cookie sheet and bake for 10-12 minutes.

ICING

INGREDIENTS:

½ lb butter (room temperature)
2 t vanilla
¼ cup GPC cold brew
¼ cup cocoa
2 cup powdered sugar

Yield: 6 Large or 12 Small Pies

DIRECTIONS:

  1. Beat the butter until creamy.  Add vanilla and cold brew, beat.

  2. Add cocoa, beat.

  3. Add powdered sugar, beat.  You can add more or less powdered sugar to get it to the consistency you like.
